Amazake is a traditional sweet rice beverage from Japan made with koji (inoculated rice). It is also enjoyed as a whole grain pudding. 
Amazake has been adopted by more modern cuisines as an energy drink, a natural sweetener and dairy alternative.
In this class you will learn how to culture and incubate your amazake, noting different inexpensive ways to make an incubator at home.
Amazake made from rice as well as other whole grains will be sampled. 
Recipes for how to flavour and use your amazake as a replacement for dairy and sugar are included. You'll also take home enough Koji to get your first batch started.
