Kid Lipase Powder - 25g
If you have no access to raw milk, lipase powder can give some of the flavour back to your cheese that got lost when it was pasteurized. Lipase powder consists of enzymes that will attach to fat molecules in the milk and break them down. This process will release fatty acids that add the 'picante' taste of your cheese.
Use at a rate of 1/8 tsp per 8 liters of milk. Add just before rennetting. Keep frozen
