Calcium Sulfate (Gypsum) - 500g
Also known as Gypsum or Terra Alba, it is the traditional coagulant for Chinese tofu. Made of naturally occurring calcium sulfate, it tends to make a softer, smoother tofu than Nigari alone. Can be used by itself or in combination with Nigari.
Use 1tbsp per 0.75lbs of soybeans.
Comes in a 500ml mason jar.
